Cauliflower Salad

Simple is beautiful.  Especially when it is low in calories high in fiber. Here is a minimalist recipe, which gives a sunny feeling to the menu.  This yellow and white combination is also a real vitamin C booster. Served cold, as salad or side dish.

Ingredients:

Cauliflower, medium size, florets cut and trimmed

Olive oil, extra virgin, 4 tablespoons

Juice of a lemon

Garlic, 2 cloves  (optional)

Sea Salt, a few pinch

Preparation Method:

Boil the cauliflower florets till they are soft. In a bowl prepare the sauce by mixing the olive oil with lemon juice and crushed garlic. Add a few pinch of sea salt.  Let the boiled cauliflower florets cool down and pour the lemon sauce over them. Serve cold.
