Make your own Muesli

Homemade Muesli

Muesli is a healthy European recipe, which is popular as breakfast cereal. It has many health benefits such as reducing the risk of various cancers, lowering the cholesterol and glycemic index. However this may not be the case for all breakfast mueslis sold in supermarkets. Generally those mueslis contain added sugar, which brings extra calories. The best way is to make your own muesli at home, with your choice of ingredients.

 Ingredients

 2 cups rolled oats, uncooked

1 cup puffed rice

½ cup squash seeds

¼ cup coconut flakes

1 tablespoon crashed walnuts

1 tablespoon crushed hazelnuts

1 tablespoon almond flakes

2 teaspoon ground cinnamon

Dried fruits as desired (bananas, apricots, raisins, cranberries…)

Preparation Method

Preheat the oven to 180 C (350 F). Mix and place all ingredients (except dried fruits, coconut and almond flakes) in an oven tray and grill for 5 minutes.  Then add coconut and almond flakes and grill for 5 more minutes. Almonds are very quick to grill, so make sure they are not burned. At the end, add any dried fruits you like at any amount.

You can consume muesli at breakfast and also as a light dish or even a dessert at any time of the day. It can be eaten with orange juice, fruit juice, milk or yogurt (original muesli was eaten with orange juice contrary to contemporary consumption habits).

Happy Easter Coconut Macaroons

All my friends find coconut macaroons gorgeous.  So does my husband. And in the end it is up to me to bake them. However I wanted to avoid eggs, dairy and excessive sugar thus ended up with this vegan recipe that will not threaten your figure. No butter, no eggs (although very unlike Easter), no milk and less sugar, yet these coconut macaroons are tempting with their gentle taste. The best part is that you will not feel guilty in the end.

Ingredients (Around 20 macaroons):

5-tablespoon flaked coconut

2-tablespoon ground almond

2-tablespoon all purpose flour

1-tablespoon granulated sugar

1 ½ cup coconut cream

Preparation method:

Preheat the oven to 220 C (425 F). Line the oven tray with a layer of baking sheet or aluminum foil and gently oil the surface. Mix all ingredients in a bowl and whisk till obtaining a dough that is not very firm.  With the aid of a scoop put drops of mixture on the oven tray. Place into the oven and bake 15-20 minutes or till the macaroons turn golden brown.
